The Mercado Central, a large covered market in central Valencia, is the starting point of this class. The group shops with a guide through the colourful aisles, then moves to a kitchen where each workstation seats one to three people to prepare a paella.

Morning sessions, Monday to Saturday, open with the market visit, for a full immersion in Valencian produce. Afternoon, evening and Sunday formats take place in the kitchen. The choice of filling, meat and rabbit, seafood or vegetarian, is specified at booking.

A session welcomes twelve participants at most: small teams where everyone gets stuck in and leaves with their own paella.
