Asador Etxebarri is a wood-fire grill in Axpe, in the Atxondo valley of Bizkaia. The kitchen lets the embers speak: meat and fish cooked over charcoal, served as a tasting menu or à la carte, for the whole table to share. The restaurant holds three Michelin stars and serves Basque signature cooking; a 2,500 m² winery completes the estate. Lunch is served Tuesday to Saturday, with dinner added on Friday and Saturday. Bookings are made online or by phone; for requests made less than 48 hours ahead, the quickest route is a direct call.
