DINS Santi Taura is the restaurant of chef Santi Taura, on the ground floor of the El Llorenç Parc de la Mar hotel in Palma's old town. The cooking reworks Majorcan gastronomy from the island's traditional recipes, with seasonal local produce. Dinner is served Tuesday to Saturday, and lunch on Saturday. The tasting menu showcases the house's craft, and two formats are on offer: the chef's bar, where the chef presents each dish, or the tables, for a more intimate moment. Es Fum is a gastronomic restaurant inside the St. Regis Mardavall hotel, in Palmanova, in the municipality of Calvià, a few kilometres from Palma. Chef Miguel Navarro, trained under Martín Berasategui, signs a refined cuisine listed by the Michelin Guide. Six-, eight- or ten-course menus, plus a vegetarian menu, leave time to savour every creation. The bright and spacious dining room invites an elegant dinner in the calm atmosphere of a grand hotel. Fera occupies the ground floor of a historic palace in Palma's old town, inside the Círculo Mallorquín. Chef Simon Petutschnig offers a reinterpretation of the Mediterranean built on local produce, sometimes touched by Asia. The restaurant is listed in the Michelin Guide. Lunch and dinner are served from Thursday to Monday, in a palace setting that gives every meal the air of a celebration. For your special occasions, the Library, a private room for about fifteen guests, offers an intimate retreat, while the main room welcomes larger tables. In spring and summer, the courtyard garden opens for lunch: a perfect place to close a day on a high note.
